Taken out of the sea with lemon, Casanova, the greatest lover of all time, also had oysters for breakfast every morning. Oysters from Mali Ston from the eastern part of the Pelješac peninsula are especially valued, not only in Croatia but also in the world, and throughout history they have been served at the famous Viennese court during the reign of Emperor Francis Joseph. Today, as part of a rich gastronomic offer, they are most often consumed fresh, but also on the grill, breaded or in soup. The oyster must not be open and must smell like the sea - a purchase rule that guarantees the freshness of the shell itself.
The body of the oyster is located between two irregular shells and is held to them by two muscles. When opening this shell, it is necessary to carefully separate the muscles with a knife, so as not to cut the meat. Also, the complexity of the action itself is usually left to the male sex precisely because of the necessary strength. Real oysters have been grown for food for more than 2,000 years, while pearl ones have a higher price precisely because of pearls. Oysters can form pearls by accumulating mother-of-pearl (which they normally cover the inside of their eyelids), and this happens when a grain of sand or some other undesirable body enters their body. Then they coat it with layers of which they secrete from their shell. In this way, they prevent this foreign body from scratching their soft body.
